Raised Southern Barbecue Co. is the vision of husband-wife team and Texas natives, Ruben and Tivisay Estrada. Ruben moved to Island Park July of 2018 when he accepted the position of Executive Chef at a local lodge. The opportunity to make his dream of owning his own restaurant became a reality in November of that year. Noticing a need and lack of variety in cuisine, the Estrada’s were determined to switch things up from the typical burger and pizza bar food in Island Park. After growing up in The South (Alabama and Texas, which is known for their great BBQ) Ruben decided that BBQ was the answer: thus, Raised Southern Barbecue Co. was born. In late 2019 Ruben and Tivi made the move to Shelley, ID to officially open their flagship location as well as their brand new food trailer. Chef Ruben’s evening routine consists of prep and seasoning the meats needing be placed on the smoker to cook throughout the night. The barbecue company is smoking briskets low and slow for 16 hrs, pork shoulders for 14 hrs , ribs 5 hrs and sausage and chicken for 2 hours. They use a combination of traditional hard woods such as mesquite, oak and pecan, and add their own unique flavor with their original rubs spices and sauces. Keeping in tradition with Texas Meat Markets, they strive to deliver the highest quality of food, always fresh, never frozen ingredients thus the reason behind selling until they sell out.
